Mac'n Cheese

  • 2 cups macaroni or other pasta

  • 3 medium carrots thinly sliced

  • 1 ½ cup frozen peas

  • ½ cup skim milk or soy beverage (regular not the flavoured variety)

  • 2 ½  tbsp cream cheese or ultra light cream cheese

  • 1 tsp dried basil, tarragon, cilantro OR 2 ½ tbsp of finely chopped fresh herbs

  • ¾ cup shredded skim mozzarella, cheddar or soy cheese

  • 2 green onions, chopped

  • salt and pepper to taste

 

In a large pot of boiling water cook pasta until al dente.  Drain and return to pot.  Meanwhile, steam the carrots and peas in the microwave for 3 minutes or on the stove for 7 minutes.  In a small saucepan or microwave safe bowl, heat milk until steaming but not boiling.  Whisk in cream cheese until smooth.  Add milk and cream cheese mixture to the pasta along with steamed vegetables, cheese and green onions.  Add salt and pepper.
