Brownie Pudding 

  • 1 cup flour

  • 2/3 cup white sugar

  • ¼ cup + 2 TBSP cocoa

  • 2  tsp baking powder

  • ¼ tsp salt

  • ½ cup skim milk

  • 2 TBSP canola oil

  • 1 tsp vanilla

  • ¾ cup  brown sugar

  • 1¾ cups boiling water

  • Nonstick cooking spray

 

Preheat oven to 350 oF. 

Mix flour, white sugar, 2 tablespoons cocoa, baking powder and salt in a large bowl.  In a separate bowl, combine milk, oil and vanilla. Add to dry mix and blend.

Pour the mixture into an 8x8x2-inch pan sprayed with nonstick cooking spray.

Mix remaining cocoa and brown sugar in a small bowl. Sprinkle over batter in pan.  Pour boiling water over batter.  Bake for 40 minutes. Don’t over bake; top of brownies should be pudding like, spoon into dessert dishes. Top with a quarter-cup vanilla ice milk and 1 tablespoon prepared light cherry pie filling, or top with pecans and light whipped cream.
