Thai Tofu 

  • 1 lb (500 grams) firm tofu

  • 1 ½ Tbsp (20 ml) limejuice

  • 2 Tbsp (25 ml) peanut butter

  • 2 Tbsp (25 ml) soy sauce

  • 1 ½ Tbsp (20 ml) water

  • ¼ tsp (1 ml) hot pepper sauce

Preheat oven to 400 F (200 C).

With a sharp knife, cut tofu into ¾ in. (2 cm) cubes or slices, about ½ in (1.3 cm) thick.  In a small bowl, combine marinade ingredients: lime juice, peanut butter, soy sauce, water and hot pepper sauce.  Mix thoroughly.  In a glass bowl, combine tofu and marinade.  Let stand for 30 minutes.

Lightly grease a baking sheet.  Place tofu pieces on sheet and bake for 15 to 20 minutes until crisp tender.  Alternately, sauté tofu slices in a heavy skilled (about 3 minutes). 

Reserve marinade for use as sauce as desired.  To prepare sauce, pour marinade into a saucepan.  Over high heat, stir the lime/peanut mixture until it thickens.  Serve hot over tofu slices. 

Variation:  Omit peanut butter, add 1 tsp (5 ml) grated ginger root and four garlic cloves, minced.  Proceed as above.
