Tofu Loaf

  • 1 lb (500 g) firm tofu

  • 1 medium onion, chopped

  • ¼ cup (50 ml) low fat or light mayonnaise

  • 1/3 cup (75 ml) tamari

  • 1 ½ cups (375 ml) whole wheat bread crumbs

  • ½ cup carrots

  • 1 ½ tsp (7 ml) dried sage leaves, crumbled (optional)

 

Preheat oven to 350 F (180 C).  Lightly grease a 1 litre (quart) loaf pan.  In a medium bowl, mash tofu and add onions, oil, mayonnaise, tamari, bread crumbs, carrots and sage.  Stir to mix ingredients.  Spoon mixture into a loaf pan and bake for 40 minutes.
